Minestrone soup with smoked bacon and butterbeans

200g smoked bacon
2 leeks washed and diced
2 sticks celery
2 carrots peeled and diced
1 onion peeled and diced
2 clove of garlic crushed and chopped
2 tbs olive oil
1 tin tomato
1.5lt chicken stock
1 tin chopped tomatoes
1 tin cooked butterbeans
Pour the olive oil into a heavy based pot and sauté the bacon until crispy.
Next add in your leeks, celery, carrots and onions until they are soft. Toss in your garlic and season w/salt & pepper.
Your tinned beans, tinned tomatoes and chicken stock go in next, then simmer for 10 minutes.
Finally add the broken raw spaghetti, cook for a further 30 mins & season again.
Serve with some warm crusty bread and enjoy!
