Sweet and Sour Chicken

Easy Fried Rice:

  • 2 cups cooked rice
  • 1 Tbs sesame oil
  • 1 cup frozen peas and carrots
  • 2-3 Tablespoons soy sauce
  • 2 eggs, scrambled
  • 2 Tbsp chopped sping onions
  • 1 Tbsp chopped garlic

Method

  • Heat a wok with oil. Fry peas & carrots until tender.
  • Add cooked rice, garlic & scrambled eggs to pan. Pour in soy sauce & fry the rice & vegetables.
  • Add chopped spring onions & serve.

Sweet and Sour Chicken:

Ingredients

  • 4 chicken pieces already cooked and skinned
  • 227g tin of pineapple in own juice/half medium sized crushed pineapple
  • 227g small tin of tomatoes
  • 85g Sugar,4 tbsp vinegar
  • 3 tbsp soy sauce
  • 1 1/2 tbsp corn flour
  • 250ml water
  • Salt and pepper.

Method

  • Heat sugar, vinegar & soy sauce together in a pan. Mix corn flour with water & pour into pan.
  • Stir well until mixture thickens, simmer for 5 mins. Add pineapple, tomatoes & season well.
  • Add chicken pieces & cook over a low heat. Serve with fried rice & enjoy.
