Kevin Dundon is in the Six Kitchen tonight with another great dish!
Ingredients
4 x 150g Approx Darnes of Salmon
Spice Mixture:
· 2 teaspoons of Cajun spice
· Pinch Cayenne pepper
· Pinch ground cumin
· 2 tbsp olive oil
Lime dressing:
· 200ml natural yoghurt (fat free if you are being very good)!
· Juice and zest of one lime
· 1 tbsp olive oil
· Seasoning
· Freshly chopped mint
Savoury Couscous:
· 250g couscous
· 600ml approx boiling water
· 2 plum tomatoes-diced
· Freshly chopped mint
· Juice & Zest of 1 lemon
· 1 tbsp Olive Oil
· Salt & Pepper
Method
· To make the couscous, add the boiling water to the couscous in a large bowl. Cover and leave to rest for approx 8 minutes. Add the diced tomatoes, lemon juice, olive oil and season well.
· In the meantime, mix together the spices in a bowl and Coat the salmon all over.
· Warm a griddle pan or non stick pan to medium, with no oil. Add the salmon and cook for 5-8 minutes on both side until cooked through.
· Just before serving , make the lime dressing, mix all ingredients together and keep aside.
· To serve, Spoon some flavoured couscous onto a plate and sprinkle with some fresh mint. Add the salmon on top of the warm couscous and drizzle with the yoghurt and lime dressing.
