The Happy Pear 5 minute Dahl
INGREDIENTS
2 wholemeal pittas
2 tablespoons of oil (any oil)
3 cloves of garlic
A thumb size piece of ginger (half your thumb)
5 scallions
Handful of cherry tomatoes
Tin of coconut milk (400 ml)
400g tinned chickpeas
400g tinned whole lentils
2 tablespoons of curry powder
1 teaspoon of turmeric
2 teaspoons of ground cumin
1 1/2 teaspoons of salt
1/2 teaspoon of black pepper
Handful of baby spinach
Juice of half a lime
Handful of coriander
Chilli flakes
INSTRUCTIONS
Turn hob on at high heat.
Add 2 tablespoons of oil (any oil).
Chop 3 cloves of garlic, ginger (if organic keep skin) and 5 scallions and add to pan. Put wholemeal pittas into toaster.
Add one tin of coconut milk, a 400g can of chickpeas and a 400g can of lentils and a handful of cherry tomatoes for colour.
Add 2 tablespoons of curry powder, 1 teaspoon of turmeric, 2 teaspoons of cumin, and increase heat and stir.
Add 1 ½ teaspoons of salt, ½ teaspoon of black pepper, juice of ½ lime.
Add a handful of baby spinach to add colour.
Chop a handful of coriander. Add the stalks to the pan.
Finally, sprinkle the chopped coriander leaf and chilli flakes over the dahl. Serve with toasted wholemeal pitta breads, cut into soldiers and enjoy!
