Makes 4 meals
Takes 20 minute
Ingredients:
8 8in tortillas
Oil for frying
400g turkey mince
1 small onion or shallot, finely diced
4 garlic cloves, minced
20g jalapenos, minced (optional)
2 teaspoons cumin
2 teaspoons smoked paprika
Sea salt & black pepper
Lime dressing:
3 tablespoons sour cream
2 tablespoons mayo
1 lime, zest & juice
1 garlic clove, minced
Sea salt
Pickled onions;
1 red onion, thinly sliced
200ml boiling water
75ml vinegar
1 tablespoon honey/sugar
Pinch of Cumin seeds
Pinch seasalt
To serve; mix & match
Thinly sliced cabbage
Avocado
Lettuce
Sweetcorn
Feta cheese
Chopped tomato
Hot sauce
Chopped chillies
Grated carrot
Coriander
Lime wedges
Method:
In a large mixing bowl add the turkey mince, onions, garlic, jalapenos, cumin, smoked paprika, sea salt & cracked black pepper.
Divide into 8 and smear on one side of each tortilla.
Place a frying pan over a medium heat and depending on how many can fit. Begin to fry the tortilla meat side down. Cook on each side for 3-4 minutes allowing them to cook fully, get a bit of colour and crispy edges.
Make the lime dressing in another bowl with all the ingredients. I like to toss this with cabbage and carrot for a quick slaw.
For the pickled onions, boil the water, add all the ingredients and mix well. Turn off the water and place in a jar. Shake every so often. They are ready to serve now and good for 2-3 days.
I like to build the tortilla with some slaw, pickled onions, coriander and jalapenos and enjoy!
