Spicy Chicken Thighs, Cajun Wedges, Yogurt Slaw
Description: This is such a simple, yet tasty recipe to create at home. Serves 4.
Spicy Chicken Thighs:
8 chicken thighs-skin on (bone in or out)
4 tablespoons Irish Yogurts Clonakilty Full Fat Natural Yogurt
2 cloves garlic, crushed
1 teaspoon paprika
1 teaspoon curry powder
½ teaspoon chilli powder
Juice of 1 lemon
Method
Preheat the oven to 190C/375F/Gas Mark 5.
Mix the yogurt, garlic, paprika, curry powder, lemon juice, and the chilli powder together in a large bowl and season. Add in the chicken thighs and using your hands (wear gloves if desired) Spread over the chicken and then chill for at least twenty minutes.
Put the chicken thighs on a flat baking tray lined with parchment paper and bake in the preheated oven until golden brown, about 30-35 minutes.
Cajun Potato Wedges:
6 large rooster potatoes-Well washed and dried
1 dessertspoon Cajun spice
1 tablespoon oil
Method
Preheat the oven to 190C/375F/Gas Mark 5
Wash some rooster potatoes and cut into chunky wedges.
Drizzle with the oil and Cajun spice
Mix them all together in a bowl and place on a baking tray lined with parchment.
Bake for 30-35 minutes until crispy on the outside and well cooked through to the centre.
Yogurt Slaw:
¼ head white cabbage-finely shredded
2-3 carrots-grated
2 tablespoons Irish Yogurts Clonakilty Full Fat Natural Yogurt
1 red onion-diced
2 tablespoons peanuts
Method
Mix all ingredients together except the peanuts and arrange in a serving bowl. Scatter the peanuts on top and chilli until required
To serve:
Place all ingredients in the middle of the table and let people help themselves.
