Summer Herb Potato Salad with Pan Seared Steaks

Summer Herb Potato Salad with Pan Seared Steaks

Details: This is one of my favourite salads. The flavour of the smoked bacon gives a wonderful flavour and is the perfect combination for some tasty steaks.

Ingredients:

  • 6 large rooster potatoes
  • 5oz/150g smoked bacon lardons
  • 3 tablespoons chopped scallions
  • 2-3 tablespoons mayonnaise
  • 1 tablespoon chopped herbs (parsley, basil, chives, mint)
  • Seasoning

Instructions:

1. Heat a frying pan and cook the smoked bacon lardons in a little oil until crispy.

2. Boil the potatoes until just tender and then allow them to steam until completely cooked through. Allow to cool fully and then slice the potatoes into rough chunks.

3. Once the potatoes have cooled down you can add the bacon lardons, chopped scallions, chopped herbs & mayonnaise.

4. Mix well and season as required

5. Serve with some pan seared steaks or baked salmon

 

Pan Seared Steaks 6 rib eye/fillet steaks (approx. 7oz/200g per person)

  • 1 tablespoon oil
  • Cracked black pepper
  • Fresh thyme
  • 2 cloves garlic

 

6. Place the steaks onto a flat plate/bowl and add the oil, cracked black pepper, thyme and garlic.

7. Allow to marinade for at least an hour but longer if time allows.

8. Heat a large pan with a little oil.

9. Add the steaks to the hot pan and providing they are not too thick cook them in the following pattern:

· Rare-2 minutes on either side

· Medium- 4 minutes on either side

· Well Done- 5 minutes on either side

10. Serve with the potato salad and some green leaves.
