Dublin Coddle

Ingredients

8 pork Sausages
300 g Bacon Pieces
1 sheet Bacon Ribs cut into 8 pieces
6 Potatoes floury type, Roosters or Golden wonders work best
2 Onions large peeled and roughly chopped
Chopped parsley and Thyme Herb
5 pints Chicken Stock
Freshly cracked black pepper
Freshly made Soda Bread / Batch loaf
Irish creamery butter

Method


In a large pot place water and bring to the boil , add bacon pieces and bacon ribs and cook for approx 10 minutes
Remove from heat and strain under cold water
Place the bacon pieces and ribs back into pot and turn heat up to medium
Next add in the stock , chopped onions , peeled potatoes and herbs
Bring pot to boil and then turn down to a simmer
Cook until bacon is fork tender approx 1 and half hours , potatoes will soften snd thicken the liquid also
Add pork Sausages and cook for a further 20 minutes
Add more stock if needed to loosen up the dish
Ready to serve with Batch loaf or Freshly Baked Soda bread and Irish butter
