Leftover Puff Pastry Turkey, Ham and Leek Pie

Ingredients

  • Puff Pastry
  • 400g Turkey 
  • 300g Ham
  • 2 Leek 
  • 200g Peas 
  • 1 Onion 
  • White wine 
  • 50g Butter 
  • 1 litre Gravy/ Stock 
  • 120g Cornflour 

 

Filling

  • For the filling, melt the butter in a large frying pan over a medium heat
  • Add the leeks and onions to the pan
  • Cover and cook gently for 6 minutes stirring occasionally until the vegetables are just tender
  • Gradually stir in the gravy stock and simmer for 5 minutes
  • Mix the cornflour with water until bound
  • Pour in the corn flour gradually stirring until the sauce has thickened slightly
  • Add the peas, shredded turkey and ham and stir through
  • Season to taste with a little white pepper and salt.
  • Preheat the oven to 180C
  • Pour the pie filling into a suitable pie dish and allow to cool
  • If you have a pie funnel, put it in the middle of the filling.

 

Pastry Rolling

  • Roll out the pastry on a lightly floured work surface to about 5mm thick
  • Cover the dish entirely ad let it hang from the sides and naturally collapse
  • Then trim off the edges when done
  • Bake for 35-40 minutes until the pastry is risen and golden-brown. Allow to cool slightly before serving

 

To Plate

  • Take a large slice and add some crispy roast potatoes
  • Smother in gravy and enjoy
