INGREDIENTS:
8 oz Linguine Pasta Cooked
2 Chicken Fillet cut into thin strips
2 tsp Cajun Spice
1 tsp Garlic Powder
1 Tbsp Olive oil
1 Yellow pepper thinly sliced
1 Red pepper thinly sliced
8 oz Mushrooms finely sliced
½ Red Onion thinly sliced
3 garlic Cloves minced
2 Tomatoes Diced
200 ml Chicken Stock
1 Tbsp Flour
Salt And Pepper
Scallions Diced
40g Parmesan Cheese Grated
METHOD:
1. Season the chicken strips with the Cajun spice
2. Heat pan on a medium to high heat ,spray with oil and cook chicken till fully cooked approx.
5-6 minutes
3. Set aside and add in the oil to pan and reduce the heat to medium
4. Add peppers , onions and garlic , Sauté for 3-4 minutes
5. Add Mushrooms and Tomatoes and cook for a further 3 – 4 minutes until vegetables are
tender
6. Season with salt and pepper, garlic powder and fresh cracked black pepper
7. Reduce the heat to medium low and add cooked chicken strips and chicken stock
8. Add cream Cheese and a sprinkle of flour
9. Once combined let it reduce by 1/3 and then add in the cooked linguine
10.Toss well to coat and top with scallions
11. Add some grated parmesan cheese and enjoy!
