INGREDIENTS:
4 eggs beaten
Salt and pepper to season
159g ricotta cheese
1 shallot finely diced
5 cherry tomatoes finely diced
3 bacon rashers grilled and chopped
1 teaspoon chopped fresh parsley
100g grated parmesan
3 tortilla wraps
1 tablespoon olive oil
6 slices black pudding cooked
METHOD:
1). Preheat the oven to 160C. Whisk the eggs in a large bowl and season with salt and pepper.
2). Add the ricotta cheese and gently incorporate into the eggs.
3). Add the shallot, tomatoes, bacon and parsley to the mixture with half the parmesan cheese.
4). Cut 2 of the tortillas in half and leave one whole.
5). Oil a quiche dish and place the whole tortilla on the bottom. Then place the 4 halved tortillas
up around the sides of the dish.
6). Pour the egg/cheese mixture into the dish and place the black pudding on top.
7). Sprinkle with the remaining parmesan cheese and place in the preheated oven for 20/25
mins until cooked through. Then remove from the oven and let it cool for 10 minutes before
serving with a baby potato Caesar salad or your favourite salad or homemade brown bread
