Ingredients:
10 to 12 portions approx.
Popcorn
· 50g Popcorn Kernels
Raspberry Coulis
· 100g Raspberries
· 1tbs Honey
· 50ml water
· ½ Vanilla pod, seeds and pod, or 1 tsp Vanilla extract or Essence
Strawberry Coulis
· 100g Strawberries
· 1tbls Honey
· 50ml Water
· ½ Vanilla pod, seeds and pod, or 1 tsp Vanilla extract or Essence
Chocolate
· 100g Dark Chocolate, melted in a bowl over hot water.
· 100g White Chocolate meted in a bowl of hot water.
Garnish
· 12 whole raspberries washed under cold water.
· 6 strawberries, washed under cold water, topped, and cut in half.
Method:
1. To start, make the coulis, place the individual ingredients into two sperate pots, bring to a simmer and cook for 5 to 8 minutes, if using fresh vanilla pods, remove the pods and blend until smooth using a stick blender or in a food processor. Place into two separate bowls and leave to one side.
2. Then, place the two chocolates into two separate glass bowls, place over a pot of hot water and let melt, you can also melt alternatively in a microwave, ensuring to mix around every 10 to 15 seconds, watch carefully, especially the white chocolate so it doesn’t burn. (You can flavour your chocolate should you like with the rind and juice of an orange, Tia maria, Cream Liquor etc)
3. After that, place the Popcorn Kernels in a pan with a tight-fitting lid, place overheat, and they should burst into popcorn after 4 to 5 minutes.
4. Finally, divide the cooked Popcorn into two large bowls, mix in white melted chocolate to one bowl, with the raspberries and the raspberry coulis and mix well.
5. With the other bowl add the Dark Chocolate, Halved Strawberries, Strawberry coulis and mix well.
6. Now enjoy your movie with your flavoured Popcorn!!
