Triple chocolate Muffin with Malteser crumble
RECIPE:
Ingredients:
250 g self-raising flour
50g cocoa powder
Pinch of salt
1 tsp baking powder
50g dark chocolate chips
50g milk chocolate chips
125g melted butter
2 eggs
250g buttermilk
200g maple syrup
Chocolate ganache
75g Dark Chocolate
225g Milk Chocolate
210g Cream
To Garnish
Packet of Maltesers
50g Dark chocolate chips
50g Milk chocolate chips
Method:
Ganache:
1. Warm the cream in a clean saucepan, Heat it to just below a simmer.
2. Place the milk and dark chocolate chips into a bowl and pour over the heated cream. Allow the mix to sit for 1 minute before stirring everything together.
3. Cover the bowl in cling film and leave to one side to set.
Muffin mix:
1. Combine in a bowl all the dry ingredients, The self-raising flour, salt, baking powder, chocolate chips and cocoa powder.
2. In a separate bowl combine the melted butter, buttermilk, eggs and maple syrup
and mix everything together.
3. Pour the wet ingredients into the dry and mix just enough till everything is combined. The mixture ideally should be covered over and left in the fridge overnight.
4. When ready to bake, preheat the oven to 210c.
5. Using a muffin tray lined with muffin cases add a little of the muffin mix to each case, just enough to cover the base of the case.
6. To the center of each muffin add a spoonful of chocolate ganache. Fill the
remaining muffin case with more muffin mix enough to cover over the ganache and the muffin case is 5/6 full. Top each muffin with additional chocolate chips.
7. Place the muffin tray in the preheated oven at 210c. Turn the oven to 200c and bake for 15 mins. Once baked, allow to cool. When cool, top each muffin with more chocolate ganache and crushed Maltesers.
