Mac 'n' Cheese Loaded Hot Dog

Jack O’Keeffe's Mac 'n' Cheese Loaded Hot Dog

This may sound excessive and I am pretty confident that it is!
(Serves 4)

Ingredients:
4 Jumbo Frankfurters
4 Brioche Hot dog buns
4 tbsp melted butter
300g Macaroni Pasta
300g Evaporated Milk
2 tbsp real butter
300g Monterey Jack or a mild easy melt cheddar or Gruyere
4 tbsp crispy onions
4 pickle’s, finally diced
1 white onion, finally diced
A dash of hot sauce
Some extra cheese
Salt and pepper

Method:
1) First start by making the mac ‘n’ cheese,
2) Bring a pot of salted water to the boil and add the pasta, cook for 7 minutes or follow the packet instructions
3) Drain the water reserving a cup or two in a jug – just encase its needed
4) Pour in the evaporated milk followed by the butter on top of the pasta and bring to the boil on a high heat
5) Add the cheese and reduce the heat to low and cook on a low heat while stirring until the cheese has melted
6) Season with salt and pepper. If its too thick adjust consistency with the pasta water
7) Place a saucepan of water onto a boil and once boiling lower in the frankfurters
8) Simmer for 8 minutes or until fully cooked through
9) While the hot dogs are in the water toast the buns by heating a grill and cutting into the bun to create an opening
10) Brush this opening along with the tops of the bun in the melted butter. Place the buns under the grill for 2 minutes
11) Once golden remove from the oven, insert the frankfurter, generously scoop in the mac ‘n’ cheese on top of the hot dog and top the hot dog with some raw onion, pickles and a dash of hot sauce
