Charlo The Chef's Sloppy Joes
(Serves 6)
Ingredients:
1 tbsp Wicklow Rapeseed Oil
1 Onion Finely chopped
2 Small red or yellow peppers finely chopped
450g Minced beef
2 Garlic cloves crushed
2 tbsp Chipotle or smokey bbq sauce
2 x 400ml chopped tomatoes
4 Slices of cheese
6 Burger buns
Crispy onions to serve
Iceberg or baby gem lettuce to serve
Method:
Step 1 - Heat the oil in a deep frying pan and fry the onion, peppers and garlic for 8 to 10 minutes until softened.
Step 2 - Add the mince and stir until brown all over.
Step 3 - Tip in the tomatoes and chipotle or bbq sauce and simmer for 10 to 15 minutes until, sauce has thickened.
Step 4 - Season with salt & pepper to taste.
Step 5 - Put the cheese slices on top of the mince and cover with a lid for 3 minutes to let it melt into the sauce.
Step 6 - Lightly toast the buns & spoon mince and cheese mixture onto buns & top with crispy onions and lettuce on the side for scooping up extra sauce.
Serve with fries or potato wedges & enjoy!
