French Style Chicken with Peas & Bacon
(serves 2)
ingredients:
2 Free Range Chicken Breast, on the bone with skin on
1 Amall Palmful of cubed Smoked Bacon
2 Baby Gem Lettuce, cored and finely sliced
2 Cloves of garlic, finely sliced
2 Sping Onions, finely sliced on the diagonal
1 cup Frozen petit pois or garden peas, defrosted
Zest of half a lemon
1 cup of good chicken stock
A glug of white wine
50g of salted butter
salt and pepper
250g of mashed potato
method:
1. In a large frying pan, saute the chicken, skin side down in a little olive oil until crisp.
2. Place in oven at 180C on a baking tray and roast for 20 minutes.
3. Place the garlic and spring onion with the bacon to the pan that the chicken was cooked in and lightly saute
4. Add the peas and wine and reduce over a high heat whilst bubbling
5. Add the stock and allow to reduce further to a loose sauce
6. Add he butter and whisk quickly to emulsify
7. Add the lettuce and lemon zest and allow to just whilt
8. Plate up 2 mounds of your pre cooked mash and top with the chicken
9. Pour over the sauce equally allowing the peas and lettuce to pool around the mash
