Beef Stroganoff

 

Ingredients:

  • 1 medium onion, sliced
  • 2 cloves of garlic chopped
  • 200g sliced mushrooms,
  • Knob butter
  • 450g fillet of beef strips (good quality stir fry beef can be used to reduce cost),
  • 50ml Brandy,
  • 1tbls Dijon mustard,
  • 200 ml full fat cream,
  • Juice of 1/2 lemon
  • 50g sliced gherkins,
  • Chopped parsley.

Method:

 

  • Heat pan over moderate heat.
  • Add some oil, add onion garlic and cook for 2_3minutes, add mushrooms and a knob of butter, cook for further 2 minutes.
  • Remove content on to a plate, re-heat the pan until smoking, add oil and then add beef, cooking quickly.
  • Add back the mushrooms and onion mix, add Brandy and flame.
  • Add cream and mustard and let reduce to a nice consistency. Add lemon juice.
  • Add the gherkins.
  • Serve with some rice, garnish with chopped parsley and enjoy
