Ingredients:
4oz/110g butter-softened
7oz/200g soft brown sugar
1 teaspoon ground cinnamon
2 medium eggs
10oz/300g over ripe bananas
2oz/50g chocolate-chopped into pieces
3oz/75g walnuts
180g plain flour
1 teaspoon bread soda
Frosting:
2oz/50g cream cheese
2oz/50g butter-softened
200g icing sugar
2oz/50g banana puree (1 mashed banana)
Method:
Preheat the oven to 170C/325F/Gas Mark 3. Grease and line a 2lb/900g loaf tin
Place butter, brown sugar and cinnamon into a bowl and cream until light and fluffy.
Beat the eggs lightly and slowly add to the butter mixture.
Mash the bananas and add to the cake mixture, followed by the chocolate and the walnuts
Sift the flour and bread soda together and add to the cake mixture until just combined.
Pour the mixture into the tin and bake for 35-40 minutes
To make the icing cream the butter and icing sugar together. Add the cream cheese and banana and continue to mix until smooth.
Spread on the cake and garnish with chopped walnuts
