Method:
For the stuffing, sauté the onions in a pot with the butter, mix in the breadcrumbs, garlic, herbs, and seasoning, add a little extra butter or splash of stock if too dry.
Butterfly/Cut into the centre of each chicken breast, to create a pocket, then add a layer of stuffing inside, then fold it back over.
Wrap each breast tightly with streaky bacon (3 rashers each), tucking the ends underneath. Season lightly on top.
Wash the potatoes and dice into cubes, with the skin. Soak for 20 minutes in icy water (optional) and then pat dry and add to a bowl with the garlic powder, rosemary, olive oil, salt & pepper and the smashed garlic cloves. Preheat your air fryer to 200c for a few minutes first then add the potatoes, for about 20-25 minutes until crispy. Shake a few times throughout cooking.
After 10 minutes, then pop the chicken into your air fryer basket and cook for approx. 15 minutes, until the bacon is crispy and the chicken is cooked through to 75c.
For the broccoli, blanch in boiling water for 2 minutes, strain and dry. Then mix with the oil and seasonings and air fry at 180c for about 6 minutes. If adding the parmesan add that on for the last minute.
When the chicken is ready, slice up into discs, serve with the potatoes and broccoli and pour over your favourite gravy.
