Deep Fried Fataya with Domoda Sauce

Deep fried Fataya with Domoda sauce 

This West African street food is a delicious combination of spicy vegetables in a crispy pastry served with Gambian’s famous peanut sauce 

Ingredients – 

For the Pastry 

  • 360g plain flour
  • 1 tsp baking powder
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • 3 tbsp vegetable oil
  • 200ml warm water

For the filling 

  • 1 onion finely chopped
  • 2 carrots finely diced
  • ½ aubergine diced
  • 1 pepper diced
  • 4 gloves garlic crushed
  • 1 diced chilli pepper
  • 1 tsp chilli powder
  • 1 tsp paprika
  • Salt & pepper

Method – 

Start with the pastry, sieve all the dry ingredients into a bowl, slowly add the oil while mixing with your hands and then the warm water. Knead into a smooth dough and let it rest for 20 minutes. 

Heat a pan over a medium heat and add a splash of oil. Then add in your onions and garlic and cook gently until soft. Add your chilli pepper, chilli powder and paprika and stir. Then add in the remaining vegetables and cook until they start to soften. Season and add chopped parsley. 

Roll out the pastry until ½ inch thick, then cut into circles using a cup or scone cutter. Spoon some of the vegetable mix into the middle. Dip your fingers into cold water and rub around the sides of the pastry. Fold it in half and grip the sides together to ensure it’s totally sealed. 

You can deep-fry them in oil at 180 degrees or use an air fryer. Cook until crispy. 

I’m serving with some salad leaves and a peanut sauce, or you can use a chilli dip
