Chicken Milanese, Heritage Tomato Salad and Sauté Potatoes

Ingredients:
2 Chicken Breast skinless 140g each
Breadcrumbs 200g
Egg wash 3 eggs
Plain Flour 200g
Parmesan Cheese 28g
Garlic Butter 20g
Clarified Butter 100g
Heritage Tomatoes 4/5
Sherry vinegar
EV olive oil
Fresh Basil
New potatoes cooked 100g
Sunflower oil
Butter 28g
Chopped Flat parsely
Method:
Place the Chicken Breasts in a heavy Plastic bag , Use a small pot or a meat hammer to bat the chicken out flat. Should be 1cm thick.
In 3 separate bowls put the egg wash , breadcrumbs and flour . Put the chicken into the flour first and shake off any excess flour. Then place the chicken into the egg wash and finally into the Breadcrumbs . The chicken should be fully coated in crumb. Be careful to use one hand for the dry materials and the other for the wet.
Place the chicken on a plate in the fridge ready for use
Heat 2 non stick frying pans to hot . While they are heating put your chopped tomatoes into a bowl and season with salt and pepper. Leave to marinate and allow the salt to draw flavor from the tomatoes. Heat your oven to 180c during this,
4.Add some oil to one of the pans , then add the sliced potatoes, toss them around and cook to golden brown.
At the same time put the clarified butter into the other pan and add the Chicken...careful not to burn....when the chicken is golden brown on one side turn it over and cook the other side. When both sides are cooked place the pan into the preheated oven for 5 minutes .
Add the rest of the ingredients to the tomato salad while the chicken is in the oven.
7 When the potatoes are golden brown add the butter ,parsley and seasoning.
8 Take the chicken out and dry on some chicken paper. Place on the plate ...add a knob of garlic butter to the middle of each Breast and grate plenty of Parmesan on top
9 Spoon some potatoes on the side and serve with lemon
The tomatoes salad can be served in a separate bowl
