Ingredients
3 tbsp Cooking Oil
2 Chicken Breast ( cut into small diced)
1 pinch of salt
2 pinch of black pepper
5 Cloves Garlic, minced
10 oz long Green Beans or regular green beans, finely chopped
1/4 cup Water
1 to 2 tbsp Fish Sauce
1 tsp Palm Sugar
1 tbsp oyster sauce
1tbsp soy sauce
1 tbsp sweet soy sauce
Handful of Thai holy basil
Method
1. Add garlic and chili in pestle and mortar and pound it until minced
2. Heat a wok or large pan over a high heat. Add 1 tbsp oil and wait until smoky hot.
3. Add the garlic and chili mix, season with a pinch of salt and pepper. Stir fry for one to two minutes until fragrant.
4. Add in the chicken to the chili mix then Constantly stir on high heat for about 1 minute.
5. Add in the oyster sauce, soy sauce and sweet soy sauce.
6. Add green beans and stir fry until the green beans are covered with the sauce evenly. Now, add ¼ cup of water, fish sauce and palm sugar. Stir fry for 3 to 4 minutes or until green beans are nice & crunchy. Add in the Thai basil and mix it in all together. Add 1 or 2 tbsp water at a time if the sauce is getting too thick or burning.
7. Remove from heat, it’s ready to serve!Serve with some warm cooked Jasmine rice and enjoy!
