Gareth Mullins' BBQ Lamb Koftas, Flat Breads, Garlic Mayo and Tomato Salad
Ingredients
Koftas
300g lamb mince
1 tea spoons – smoked paprika, cumin, coriander
2 tbs Chopped mint & coriander
1 cloves garlic chopped
1 red chilies chopped
To make the koftas, put the ingredients into a bowl and mix well, season with salt and pepper
12 skewers soaked in water for a couple of hours
Method
Shape the lamb mix onto the skewers into a sausage them place into the fridge for a couple of hours to set
For cooking the lamb Koftas, take out the fridge 20 minutes before cooking,
Then sear off on the grill or bbq,
You will need to cook on the bbq for 5 minutes on eash side, season well with salt and pepper
As always, allow the meat to rest for 4-6 minutes before serving
Garlic sauce
100mls crème fraiche
2 table spoons mayonnaise
1 clove garlic
½ lemon juiced
1tbs cracker black pepper
Salt to taste
Mix all the ingredients
Tomato Salad
1 punnet cherry tomatoes – chopped
1 red onions sliced
10 mint leaves chopped
1 lime juiced
2 table spoons extra virgin olive oil
Salt and pepper
