Ingredients
· Feeds 6 ( 2 adults & 4 kids )
· 4 chicken fillets ( 500g )
· 125g ball of fresh mozzarella
· 4/6 tsp sun-dried tomato pesto
· Optional : 3 tsp garlic butter
· 50g chorizo
· 1/2 tsp Italian herbs
· 75g tuc crackers
· 75g parmesan cheese
Method
1. To make the crumb - blitz up the crackers, chorizo and parmesan. Add in the Italian seasoning.
2. To prepare the chicken, pop it on a chopping board. Cut the chicken open lengthways. Flatten out between 2 sheets cling film or parchment paper.
3. Cut the mozzarella into 6 slices
4. Spread a tsp of the pesto on the inside of chicken fillet.
5. Place in the mozzarella.
6. Roll up and place in the oven proof baking dish.
7. Sprinkle the crumb on top, dot with butter and pop in some cherry tomatoes on the side.
8. Bake in a preheated oven at 180ºc for 20mins.
9. Serve with creamy mash and buttered corn.
