Clean and chop the sweet potato into small cubes. Place on a baking tray bake for 30 mins.
Finely chop the chilli, garlic and red onion.
Once the sweet potatoes are baked, put into a large bowl and add the rest of the ingredients, with the exception of the peas. Using a potato masher mash all ingredients until well mixed. Add the peas and gently mix trying to keep them whole for colour and texture.
Roll the mixture into balls.
Sieve the gram flour into a small bowl and mix with the water salt and pepper until smooth.
Dip each ball into the batter until well coated.
Either fry in a hot frying pan with 2 tbsp or oil until crispy on each side OR bake at 180 degrees for 10 mins on each side.
