The Happy Pear Sweet Potato Fritters

Makes approx. 18 fritters

 

INGREDIENTS 

·         1kg sweet potatoes

·         1 red chilli

·         2 cloves garlic

·         150g peas

·         1 red onion 

·         1 can of cooked chickpeas

·         1/2 tsp smoked paprika

·         1 tsp cumin seed

·         2 tsp cumin seed 

·         1/2 tsp pepper

·         1 tsp salt

·         3 tsp tamari

·         Juice 1/2 lemon

 

For the batter: 

·         100g gram flour 

·         200ml water

·         Pinch salt 

·         Pinch of black pepper

 

INSTRUCTIONS 

 

  • Preheat the oven to 180 degrees.
  • Clean and chop the sweet potato into small cubes. Place on a baking tray bake for 30 mins.
  • Finely chop the chilli, garlic and red onion.
  • Once the sweet potatoes are baked, put into a large bowl and add the rest of the ingredients, with the exception of the peas. Using a potato masher mash all ingredients until well mixed. Add the peas and gently mix trying to keep them whole for colour and texture.
  • Roll the mixture into balls.
  • Sieve the gram flour into a small bowl and mix with the water salt and pepper until smooth. 
  • Dip each ball into the batter until well coated.
  • Either fry in a hot frying pan with 2 tbsp or oil until crispy on each side OR bake at 180 degrees for 10 mins on each side.
