Apple in a Pastry Jacket

Ingredients:

4 apples, peeled and cored, 200g blackberries, 1 Sheet of puff pastry, 50g sugar, 3 pinches of cinnamon, 1 lemon juiced, Egg wash to seal.

 

Method:

• Preheat the oven to 220°C

• Pour the lemon juice over the apples. Sprinkle with a little sugar & cinnamon.

• Lay the pastry onto a lightly floured surface, then cut the pastry into 4 squares & brush the edges with a little egg wash.

• Place the apples in the centre of each square. Pour some blackberries in to the core of each apple.

• Fold the puff pastry over the apples, sealing the edges with the egg wash.

• Place in a preheated oven for 45 minutes.

• Serve with some freshly made custard or ice-cream.
