Dessert lovers will often raise an eyebrow when they hear the words “gluten-free” on the menu, but that's about to change. Edward Hayden is here to shows us how to whip up a coeliac friendly version of the traditional bread and butter pudding.
INGREDIENTS
•2 x Promise Gluten Free White Loaf
•butter to spread
•600 ml milk
•400 ml cream
•4 eggs
•1 tsp vanilla extract
•150g caster sugar
•zest of 1 orange
METHOD
1.Pre-heat the oven to 180C.
2.Discard the ends of the loaves and butter the slices.
3.Pour the milk and cream into a saucepan and warm over a gentle heat.
4.Whisk together the eggs and sugar until pale and then pour the warm milk and cream mixture over.
5.Arrange the bread in a oven dish overlapping them to fit. Pour over the custard and leave to sit for 15 minutes.
6.Place the dish in a larger oven dish, fill with boiling water to come up to halfway.
7.Sprinkle on the zest, cover with tin foil and bake for 30 minutes.
8.Remove the foil and bake for another 15 minutes.
9.Serve while hot.
