Greek Spinach & Feta Pie
Greek Spinach & Feta Pie
(serves 6)
 
ingredients
1 kilo of frozen spinach
500g of good feta
2 heaped tbsp of dried or fresh dill and parsley
2 large egg
1 small onion, peeled and finely diced
A splash of full fat cream
2 sheets of shop bought ready to roll puff pastry
 
method:
1.  Make sure the spinach is completely thawed out and place in a colander, squeeze as much excess liquid from it by pushing it against the base and then wrap in a clean tea towel squeezing any remaining water out.
2.  Gently saute the onion in a little olive oil until just cooked
3.  Once cool, coarsely chop the spinach and mix really well with feta and other ingredients by hand in a large mixing dish until you have a thick batter
4.  Lay out one sheet of pastry and egg wash all around the sides
5.  Place your filling in the centre and carefully push out to the edges but not all the way you leave a 1 inch rim of pastry showing
6.  Place the second sheet over the top and pinch down around the rim to secure filling
7.  Egg wash the top and sprinkle with sesame seeds if you have them. 
8.  Bake for 30 minutes at 180 fan until golden brown and allow to cool completely before cutting into 6 generous portions
