Pan Seared Sea Bass With Garlic Potatoes, Tender-stem Broccoli, Tomatoes And Black Olive Salsa

Ingredients
Serves 2
2 large sea bass fillets pin bone removed
8 baby boiled potatoes
30g garlic butter
200g tender-stem broccoli
1 tomato de seeded and cut in small cubes (concass)
8 black olives cut in to rings
3tbs olive oil
1 tbs fresh cut parsley
1 tbs fresh cut chives
Juice of quarter lemon
1 tsp of capers
Method:
Place your baby potatoes in a pot of water that is seasoned with salt and bring to the boil. This should take about 25 minutes . When the potatoes are cooked add some garlic butter and cover with the lid of the pot until ready to serve.
Bring a large pot of water to the boil. Add in the broccoli and cook for four min . Drain off the water and keep warm .
Season your sea-bass fillets with some salt and pepper. Place them skin side down in to a very hot frying pan that has about 1 tbs of oil in it.
In a bowl add the tomato olives, capers, herbs, lemon juice and a good bit of olive oil until you make a nice salsa.
Arrange all your ingredients nicely on a plate and drizzle the salsa around the plate. Enjoy!
