Irish Soda Bread with Cheese and Spinach
INGREDIENTS
250g plain white Irish flour
250g plain wholemeal Irish flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp sea salt flakes
25g soft butter, cut in pieces
500ml buttermilk or out of date milk
180g Irish cheese (save your ends for this)
100g spinach
 
METHOD
1.    Preheat the oven to 180C and dust a baking sheet with flour
2.    Grate your cheese and cook your spinach very lightly in pot, allow the spinach to cool and then squeeze out any excess water
3.    Mix the dry ingredients in a large bowl, then rub in the butter, add the cheese and spinach
4.    Pour in the buttermilk and mix it in quickly with the tops of your fingers, then bring the dough together very lightly and place it on a floured surface
5.    Now shape it into a flat, round loaf measuring 20cm/8in in diameter
6.    Put the loaf on the baking sheet and score a deep cross in the top. Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped
7.    Transfer to a wire rack and leave to cool
