Garlic & Herb Chicken with Gnocchi

Adrian Martin's Garlic & Herb Chicken with Gnocchi

Ingredients:

  • Zest and juice of 1 lemon
  • 5 garlic cloves
  • 2 tbsp oil
  • 4 chicken breasts or skinless boneless thighs
  • 2 sprigs of thyme & rosemary
  • Knob of butter
  • 500g cherry tomatoes
  • 500g gnocchi
  • Handful of basil
  • Parmesan, to finish

Method:

  1. Firstly marinade the chicken in a bowl. Crush the garlic, zest the lemon and juice it, chop the rosemary and thyme.
    Place it all into a bowl and mix it through with the chicken.
  2. Heat the oil in a frying pan and fry the chicken until golden on both sides. Add in the tomatoes and reduce the heat to simmer.
    Allow them to cook with the chicken for 10-15 minutes until the chicken is cooked through.
  3. In a saucepan of salted boiling water boil the gnocchi until it floats to the surface.
    Remove with a slotted spoon and add straight to the tomatoes and chicken.
    Add the knob of butter and basil and serve with a good grating of parmesan.
