Easy High Protein Burger
Ingredients: 1.50 tbsp olive oil, 1 cloves of red onion, 2 cloves of garlic, 2 tbsp cumin seeds, 200 g sweet potato, 100 g cashew nuts, 240 g can of mixed beans, ¼ tsp black pepper, 1 pinch of salt, 1 tbsp tamari, 1 bunch of coriander (cilantro), 2 tbsp flaxseed, 2 tbsp water, 1 lemon, 300 g Quinoa
Chop sweet potato into bite sized pieces & boil until soft. Steep quinoa with hot water until soft.
Mix flaxseed with water until it reaches an egg like consistency. Refrigerate.
Fry onion, garlic & cumin seeds. Add cashew nuts & fry until golden brown. Add cooked quinoa & stir.
Add mixed beans & coriander to the pan. Add in flax egg & lemon juice to combine mixture together.
Pour mixture into a bowl, add in potato & tamari. Using your hands form 4 burger patties.
Fry for 4 mins on each side. Serve on wholemeal bun with vegan mayo, avocado & beetroot hummus.
