Garlic & Chilli Prawns with Pak Choi

Ingredients:

  • 24 Prawns - Shelled and de-veined
  • 3 Garlic clove – Chopped
  • 2 Red Chillies – Chopped
  • 2 Heads of Pak Choi - Chopped
  • 1 Red Onion – Chopped
  • 1 Red Pepper – Chopped
  • 6 Lime Leaves
  • 1 Large bunch of fresh Coriander
  • 1 Lime
  • 2 Tablespoons chopped ginger
  • 2 Tablespoons Peanuts

Method:

Heat a Wok or large frying pan over a high heat. Add Vegetable Oil and prawns and toss. Add Peppers, Chillies, Garlic, Ginger and Lime Leaves with salt and pepper to taste and toss for 1 minute. Add Pak Choi and toss for 1 minute. Add dressing. Place in serving bowls and sprinkle with peanuts, coriander and a squeeze of lime juice.

 

Asian Dressing

  • 4 Tablespoon Soy Sauce
  • 4 Tablespoon Oyster Sauce
  • 4 Tablespoon Fish Sauce
  • 4 Tablespoon Rice Wine Vinegar
  • 2 Tablespoon Brown Sugar
