Cliona O'Connor's Krispie Oatmeal Bars & Apple Muffins
Krispie Oatmeal Bars
Ingredients
120g jumbo oats
50g sesame seeds
70g desiccated coconut
120g honey
40g light brown sugar
25g unsalted butter
1½ tsp vanilla extract
1 pinch sea salt
50g crisp rice cereal, such as Rice Krispies
30g Raisins
Instructions
Preheat the oven to 180C/160 fan/ 350F.
Spread the oats onto a lined baking sheet. Place in the oven for 8 mins.
Add the sesame seeds & coconut, mix well & cook for 4 - 5 minutes more.
Keep an eye on it so the coconut doesn’t get dark.
Remove pan and turn down oven to 140C/120 fan/280F.
In a small pan melt the honey, brown sugar, butter, vanilla extract and salt over medium heat.
Once combined, set aside off the heat.
Mix the oats, honey mixture, krispies & raisins in a large bowl.
Pour the mixture into a lined 8x8inch tin & bake for 22 to 25 minutes. Make sure to press the mixture down really well into the tin with a spoon or fork.
Cool completely in the tin.
Slice into rectangles.
Store the bars in a sealed container in the fridge.
Apple Muffins
Ingredients
200g self-raising flour
1 tsp baking powder
1 tsp cinnamon
70g wholemeal flour
100g golden caster sugar
2 eggs
130mls semi-skimmed milk
4 tbsp sunflower oil
1 apple , grated
1 medium carrot, grated
100g sultana
2tbsp natural yoghurt
100g icing sugar
Method
Preheat oven to 180C/160C fan/gas 4.
Mix the self-raising flour, baking powder, cinnamon, wholemeal flour & caster sugar in a large bowl.
In another bowl, mix the eggs, semi-skimmed milk & sunflower oil.
Pour the wet ingredients into the dry & mix.
Stir in the grated apples & sultanas.
Divide the mix into 12 muffin cases.
Bake for 22- 25 mins.
Optional
Mix the icing ingredients together in a small bowl.
Drizzle on top.
