Erica’s Smash Burgers – Double Cheese
Takes 15 minutes
Makes 4 burgers
Ingredients for burger sauce:
6 tablespoons mayonnaise of choice
1 tablespoon ketchup of choice
1-4 dashes hot sauce of choice
1 teaspoon strong mustard
2-3 gherkins, finely grated
Pinch garlic powder
Pinch onion powder
Sea-salt
Remaining ingredients:
Oil for frying
800g 20% fat minced beef, like rib-eye
Sea-salt and black pepper
1 onion, white or red, thinly sliced
4-8 slices ‘American cheese’ (easy singles!)
4 burger buns, I love brioche ones
¼ head iceberg, shredded
1-2 tomatoes thinly sliced
Gherkins, optional of course!
4-6 tablespoons burger sauce
Method:
Firstly make your burger sauce by mixing all the ingredients in a bowl, taste and see if you wish to add anymore heat or salt etc.
Place a large frying pan/skillet over a high heat. Ideally cast iron pan.
Toast the brioche buns as the pan is warm and keep in oven warm on a low temp or wrapped in a tea towel.
Now wait for the dry pan to start to smoke, it needs to be extremely hot.
Divide your mince into eight portions, no need to mix it or squish it together, keeping it loose is good.
Put some oil in your pan and let that heat up.
Now add 2 of the mince portions and smash them down until nice and thin. Leave them be to get all brown and crispy on the edge.
I like to put some onions around the edge of the pan, season them with salt and pepper.
Season the top side of the mince with salt and I love to put a dollop of burger sauce before I flip them!
Flip the burger over and immediately place on your cheese slices on top.
Let these cook for a further minute or two on the high heat, tossing your onions gently.
Prep your buns – my order is as followers- bun base – spoon sauce – shredded lettuce – double cheese burgers – onions – tomatoes – sauced up top bun!
Serve immediately and enjoy every bite!
