Marinated Greek Style Chicken Skewers Pitta's with homemade Tzatziki sauce and a mixed cous cous
Ingredients:
- 2-3 Chicken Breast/thighs
Tzatziki
½ cucumber
200g Greek yogurt
small bunch mint, finely chopped
1 small garlic clove, crushed
juice ½ lemon
Marinade:
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried mint
1/2 tsp ground cumin
1/2 tsp coriander
1 tsp paprika
½ tsp ground cinnamon
zest and juice 1 lemon
2 garlic cloves, crushed
CousCous Salad:
100g couscous
200ml hot low salt vegetable stock (from a cube is fine)
2 spring onions
½ red pepper
½ cucumber
50g feta cheese, cubed
1 tbsp Oil
Instructions:
- Add the chopped chicken pieces to a large bowl and add all the marinade ingredients on top along with a pinch of salt and pepper. Best 3-24 hours marinating.
- Add the chicken to skewers with vegetables of your choice (red onion, pepper, mushrooms, tomatoes etc.) and grill / BBQ / bake until the chicken is cooked through fully (12-15 min)
- To make the tzatziki, halve the cucumber lengthwise and scoop out the seeds. Finely chop, then combine with the remaining ingredients, along with a pinch of salt. Chill until ready to serve.
- For the cous cous: Add the boiling stock into a large bowl with the pre seasoned dry cous cous and cover to allow it to absorb fully. Mix with a fork after 3-5 min and add in the chopped veg, oil and feta cheese.
- Serve the cooked chicken and veg in some pitta's or flatbreads with some tzatziki, tomato, lettuce and a side of cous cous
