Spiced Monkfish, Roast Cauliflower, Raisins and Shrimp in Brown Butter

Ingredients
4 x 160g monkfish fillets
1 head of cauliflower cut into 4 thick slices
100g raisins
100g shrimp cooked and peeled
100g butter
1 tablespoon chopped parsley
1 lemon
1 tablespoon of curry powder or spices
Method
- Heat a pan, add vegetable oil, toss fish in spices & season. Brown on all sides and place in oven for 5 min at 180°C.
- Brown cauliflower on both sides in a hot pan, season.
- In a saucepan, melt butter & cook until it turns a light brown colour. Add shrimp, raisins & parsley.
- Squeeze lemon juice. Add some to saucepan & keep some for garnish.
- Place cauliflower on plate, then add Monkfish and pour a spoon of butter sauce over it. Garnish with lemon.
