Serves 4
4 trout darnes
8 tbsp teriyaki sauce
4 tbsp vegetable oil
400g soba noodles
2 Tbsp toasted sesame oil
2 tbsp soy sauce
1 tbsp sesame seeds, lightly toasted
2 tbsp fresh coriander, to serve
In a large dish, place the trout fillets and add the teriy
aki sauce and 2 tbsp vegetable
oil. Leave to marinate for 30 minutes.
Meanwhile, cook the soba noodle in boiling water for 5-6 minutes
, or according to the
packet, drain and immediately cool down in a bowl of iced co
ld water to stop any
further cooking. Mix in the toasted sesame oil, soy sauce
to coat and set aside.
After 30 minutes, lift the trout out of the marinate and pat
dry with some kitchen
paper.
Heat up 2 tbsp vegetable oil in a large frying pan, over a mo
derate heat. Fry the fillet
skin-side down first 2 -3 minutes each side.
Remove the trout from the heat and serve immediately wi
th the sesame flavoured
soba noodle.
