Pan Seared Lamb Chops with Crushed Potatoes

Ingredients:

  • 6 Irish Lamb Chops ( Centreloin are good)
  • 400g Baby New Potatoes
  • 60g Butter
  • 10g Mint leaves
  • 6 Olives chopped
  • 1 Half lemon
  • 10g Mint Jelly

 

 

Method:

1. Cook the Potatoes in Salted water and set aside.

2. Heat a steel Pan and add a splash of oil.

3. Seal the Chops on both sides, 3 minutes each side. Add the butter just at the end. Strain the potatoes at this stage but leave the Potatoes in the pot.

4. Remove the chops and place them on two plates.

5. In the Pan you will have a buttery bottom mixed with the lovely elements that have caramelized for the chops. Squeeze in the lemon Juice and scrape the bottom of the pan with a wooden spoon.

6. Add the olives, Mint and int jelly to the pan.

7. Crush the potatoes in the pot with a spoon and add Half of the pan juices, The remainder Pour over the Chops.

8. Spoon the Potatoes beside the chops and serve .
