Thai Peanut Chicken Curry w/ Jasmine Rice & Garlic Naan Bread

Method

  1. Build the Flavor
  2. Heat oil in a pan or wok over medium heat. Sauté onion for 2–3 mins until soft.
  3. Add garlic and ginger; cook 30 seconds. Stir in red curry paste and fry for 1–2 mins until fragrant.
  4. Add coconut milk, peanut butter, soy/fish sauce, sugar, lime juice, and stock.
  5. Stir well until smooth and gently simmer for 5 minutes. Add chicken and simmer for 8–10 mins until cooked through.
  6. Add vegetables and cook another 3–5 mins until tender but crisp. Taste and adjust if needed. 
  7. Serve the thickened curry on a bed of fluffy white rice & a side of garlic brushed naan bread 
  8. Top with coriander, crushed peanuts, chili, and a squeeze of lime.
