Air Fryer Tandoori Chicken Skewers & Rice

Get all over these, they're perfect and beyond simple to make. Gorgeously flavoured chicken skewers with a mint and lime yogurt.

Ingredients
 
  • 400g of chicken to be coated in:
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 heaped tbsp yogurt
  • 1 tbsp tomato purée
  • 1 tbsp garlic purée
  • 1 tsp ground ginger
  • salt and pepper
  • 1 tsp oil
  • juice of a lemon
  • 1 tsp red food colouring (optional)
  • for the mint & lime yoghurt, mix the following:
  • 1 to 2 tbsp of fat free yoghurt
  • juice of 2 limes
  • freshly chopped mint
  • salt and pepper
 
Method
 
  1. Coat 400g of chicken in all of the spices, yoghurt, tomato puree, lemon and a dash of red food colouring. Once done, mix together in a bowl.
  2. Place the chicken pieces onto skewers and cook them in the air fryer at 200°C for 17 minutes.
  3. Create your refreshing mint and lime yoghurt dip by blending fat-free yoghurt with the juice of two limes, freshly chopped mint, and a pinch of salt and pepper.
