Vegetable Falafels with whipped tahini salad

Vegetable Falafels with whipped tahini salad
Ingredients:
 
200g tinned chickpeas
3-4 tablespoons of flour
150g vegetable stalks, leaves, tops etc
½ Onion, Chopped
Handful of fresh Coriander
1 tablespoon Tahini
4 gloves garlic, chopped
1½ teaspoon Cumin Powder
Sea Salt and black pepper to season
¼ teaspoon Chilli powder
Whipped Tahini Dressing:
200g Tahini
2 garlic gloves peeled
Juice of ½ lemon
Pinch of salt
200ml cold water
 
Instructions
 
Place the vegetables, onion, coriander, minced garlic, tahini, cumin, chilli, salt, pepper in a food processor and pulse until finely minced. Then add the chickpeas and flour Do not over-pulse – the mixture should be coarse
Use your hands to shape falafel mixture into small balls or patties and place frying pan on a medium heat with enough oil to shallow fry
Fry for 3 minutes, flipping half way, until golden brown and crisp.
For the dressing add the tahini, garlic, lemon and salt to a blender, place on a low speed and slowly add the water until totally combined and creamy
Serve falafel with mixed salad leaves the cool sauce and a warm pita!
