Lamb Kofta Flatbread with Hummus, Yogurt Dressing and Pickled Red Onion
INGREDIENTS
 
500g lamb mince
1/2 Onion diced
200g Breadcrumbs
1 clove garlic crushed 
10g fresh Coriander chopped
A Pinch of each- Cumin,Paprika,Cinnamon, Salt, Black Pepper, Chilli
100g Hummus
1 Cup Yogurt
1Tbspn Olive oil
1 clove Garlic
1 Tbspn lemon Juice
Salt & Pepper
2 Flat Breads
1 Red onion Sliced & Pickled
 
1. Combine all of the Kofta Mix and leave in the fridge for a half hour to rest. Then take out and roll the mix into Cylinder shaped Koftas. 
2. Heat a non stick pan then add a small amount of oil. Roast the koftas on each side and cook fully through.
3. Heat the flatbreads in the oven for 5 minutes.
4. Combine All of the yogurt dressing ingredients.
5. Place a flatbread on each plate. Spoon some of the hummus on top.
6. 3/4 koftas on each bread will be enough.
7. Dress with the yogurt and Pickled Onions to serve
