INGREDIENTS
• 2 Beef Fillet Steaks 200g each
• 2 Peppers
• 1 Courgette
• 1 Aubergine
• Bamboo Sticks 12cm – soaked in water
• Salt & Pepper
• ½ lime juiced
• Honey
• Soy sauce
• Coconut Milk
• Chopped Roasted Peanuts
• Peanut Butter
• Dried Chilli in Oil
• Black Rice
• Red rice
• Basmati Rice
• Sesame Seeds
• Sesame oil
• Soy sauce
METHOD
1. Chop The Steaks Into 8 pieces each
2. Cut the Vegetables into similar size pieces
3. Make skewers of the meat and vegetables on the wooden skewers. It’s important to soak them in water to stop them burning.
4. Set the skewers aside in the fridge
5. Combine all of the satay sauce ingredients and keep aside in a bowl
6. Boil each rice separately then combine the 3 together when cooked
7. Heats the BBQ to a high heat, after 40 mins it's ready to go
8. In a steel pan lace some of the rice and a small amount of water, place it on the BBQ.
9. Oil the skewers lightly and place on the grill, they should sizzle.
10. Grill for 3 minutes on each side for Medium Cooking Temperature
11. To serve, mix some sesame seeds, oil and soy sauce into the rice
12. Spoon some rice into the middle of each plate and place a skewer or two on top. Drizzle some satay sauce on top
