Strawberry Blondies

Conor Spacey's Strawberry Blondies

Ingredients:

• 180g White Chocolate

• 115g Butter 

• 100g Caster Sugar

• 2 Whole free range eggs

• ½ Vanilla pod (or a splash of vanilla essence)

• 125g plain flour 

Method:

1. Line an 8 -10 inch square baking dish with butter or parchment paper. 

2. Cut the butter and chocolate in cubes and place into a bowl 

3. Boil some water in a deep pot and place the bowl on top. Melt the white chocolate and butter until smooth. Stir frequently while it’s melting. 

4. To this melted white chocolate mixture, stir in the castor sugar with a whisk.

5. Add the eggs and mix until combined, then add the vanilla beans and flour and stir until a batter is formed.

6. Pour batter into the prepared baking pan and add your sliced strawberries

7. Bake for 20 minutes, remove from the oven and allow to cool 

8. Cut into squares and serve with fresh cream or icecream and strawberry coulis (made from the tops).
