Beef and Green Papaya Salad (Somtam)

Chef: Sham Hanifa

 

Ingredients:

8oz Sirloin Beef (Marinated with Soy Sauce, Garlic & Black Pepper)

2 small garlic cloves (minced)

1 shredded unripe green papaya

1 shredded unripe Mango

2 red chili (Sliced)

1 tablespoon soft brown sugar

2 tablespoons roasted unsalted peanuts (crushed)

1 tomato (julienne)

5 sprigs of coriander (roughly chopped)

3 Lime Leaf (finely Sliced)

2 long beans (roughly cut)

1 fresh lime juice

1 cucumber (finely sliced)

3 tablespoons fish sauce

1 baby Gem

 

Method:

Place non-stick pan on a medium heat, add oil and sear the beef for 3 minutes each side.
Leave aside and let it rest.
In a mixing bowl add in the garlic, peanuts, lime juice, fish sauce, sugar and lime leaves. Mix well until sugar is dissolved. Then add in remaining ingredients and toss it again.
Put the salad mix in a bowl drizzle with the remaining juice.
Thinly slice the beef and decorate over the salad.
Can be served with Jasmine rice or brown bread
