Honeycomb:
- 200g caster sugar
- 5 tbsp golden syrup
- 2 tsp bicarbonate of soda
Rocky Road:
- 110g Butter
- 180g Honey
- 360g Milk Chocolate
- 250g Digestive Biscuits
- 200-250 g Marshmallows
Method:
1. Stir the caster sugar and golden syrup together in a deep saucepan over a gentle heat until the sugar has melted.
2. Once an amber colour has formed in the pot, turn off the heat, add the bicarbonate soda and stir through immediately. Tip the foamed honeycomb into a greased & lined container and allow to cool fully.
3. Once set, break into honeycomb shards to use in rocky road.
4. Break the digestive biscuits, marshmallows, honeycomb and any other chocolates you like into a large bowl.
5. Melt the butter, chocolate and honey in a pot and pour over the biscuit mix. Toss to coat it all, add to a lined 9x9" pan and refrigerate until set (2+ hours). Top the rocky road with extra chocolate and biscuit pieces before setting!
6. Cut and enjoy!
