Sausage Rolls with Apple and Sage and Hot Spiced Apple Cider

For the Sausage Rolls
- 400-500g sausage meat or minced pork
- Cooking apple, finely grated
- 2 garlic cloves, crushed
- 1 tablespoon of chopped sage
- Sea salt and black pepper to taste
- 1 pack puff pastry
- 1 egg, beaten
- 1 tablespoon nigella seeds
For the Hot Cider:
- 1lt of your favourite local cider or apple juice
- 3 tbs honey/or brown sugar
- 1 apple, sliced in disks
- 1 tbls cloves
- 2-3 star anise
- 2 bay leaves
- 2 sticks cinnamon
- 1 tsp cardamom pods
- 1-2 shots brandy (optional)
Combine your mince with the apple, garlic, sage, sea salt and black pepper.
Using your hands make sure everything is well combined.
Roll out your pastry and slice in half long ways.
Place a line of the meat mixture all the way along the pastry about an inch from the edge.
Fold over the pastry and press down with a fork. Brush them with the beaten egg and sprinkle on your seeds.
Cut into 12 pieces and place on a baking tray. Bake for 25-30 minutes and serve
For the cider, stud your apples sliced with the cloves.
Place all your ingredients into a large sauce pot and heat, do not boil. Serve it hot.
