Sweet and Sour Chicken 

INGREDIENTS

  • 4 Manor Farm Irish Chicken breasts
  • Half a red Pepper
  • 1 spring onion
  • 2 cloves garlic
  • Ginger (thumb-sized piece)
  • 100g fresh pineapple cut in small chunks 
  • Basmati rice

For the sauce:

  • 1 tbsp cornflour
  • 1⁄2 tbsp soft light brown sugar
  • 2 tbsp pineapple juice
  • 1 tbsp dark soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp tomato ketchup

 

RECIPE PREPARATION

  1. Add the rice to a pot, fill with water to an inch above the rice and boil until cooked.
  2. In a frying pan, add a good glug of olive oil and fry the chicken until you get a nice golden colour. Remove from the pan.
  3. Add the vegetables to a hot pan and fry for 2-3 minutes until softened and aromatic in some oil. Add back in the chicken at this stage.
  4. Add the sauce ingredients to the pan and mix together until thickened.
  5. Simmer gently on a low heat for 6-8 minutes until thickened and a vibrant sauce has formed.
  6. Slice the spring onion , and serve with the fluffy rice.
