Lemon Posset with Marinated Berries

Serves: 4-6

Ingredients:

  • 600ml cream
  • 150g caster sugar
  • 1 vanilla pod
  • Juice & zest of 1 lemon
  • 1 large passion fruit

For the berries

  • 2 tbs of crème de cassis
  • 1 tsp of blackberry balsamic vinegar or ordinary balsamic.
  • 1 tsp vanilla extract
  • 250g mixed strawberries and raspberries
  • 4-6 mint sprigs

Method:

  1. Put the cream, sugar, vanilla pod lemon zest and juice in a pan.
  2. Cut the passion fruit in half, scoop up the seeds and pulp, and then pass them through a sieve.
  3. Add the passion fruit juice to the pan and bring to the boil of 1-2 mins.
  4. Leave the mix to cool slightly. Taste and add extra sugar if too bitter.
  5. Sieve the mix and pour into 4-6 glasses. Chill for 1-2 hours or overnight.
  6. In a bowl, cover the mixed berries with the crème de cassis, blackberry balsamic vinegar and vanilla extra.
  7. Cover the bowl with cling film and shake. Leave for 1-2 hours or overnight.
  8. Spoon the marinated berries into the posset-filled glasses and top with a mint spring.
